Our family has been making Raymond Blanc’s chickpea pancakes1 from the 1998 book Blanc Vite for longer than I can remember ― at least a couple of decades. We made them every Sunday with child #1 and child #2 when they were little and they enjoyed them with various combinations of Nutella, fruit and squirty cream from a can.

I have always favoured savoury and this combination is heavenly.

  1. Cook your pancake.
  2. Spread it with a thin (or thick) line of Galbani ricotta.
  3. Add a few strips of Skipness cold-smoked salmon.
  4. Dust with some pepper and dribble of lemon juice, then roll up.
  5. Eat. Enjoy!

  1. I can’t see the recipe anywhere, so this is how I make them. Use a stick blender to combine 80g chickpea flour, 3 tbsp olive oil, 180g (yes, I weigh it) of semi-skimmed milk, one egg, 1 desert spoon of runny honey and a pinch of salt. Leave to rest for a few minutes before frying with a little oil.↩︎
